Leafy Greens Surpassing Kale in Vitamin K

Health Points

  • Seven cups of spinach deliver more than 1000 percent of your daily vitamin K needs.
  • Collard greens and turnip greens provide more vitamin K per serving than kale.
  • Daily vitamin K supports healthy blood clotting and bone maintenance.

Most people reach for kale when they want extra vitamin K, yet several everyday greens contain even higher amounts. Spinach, collard greens, and turnip greens lead the list, delivering more of the nutrient in a single cooked cup than the same portion of kale.

Nutritionists note that vitamin K helps the body form proteins needed for blood clotting and bone strength. Adults generally need about 90 to 120 micrograms each day, and these greens supply well above that target.

“Spinach is an easy swap that keeps meals familiar while boosting nutrient intake,” says registered dietitian Laura Davis.

Collard greens follow closely behind, offering roughly 770 micrograms per cooked cup. Turnip greens come next, providing more than 500 micrograms in the same portion size. Both vegetables cook down quickly and pair well with traditional Southern sides or simple olive-oil sautés.

Swiss chard, mustard greens, and beet greens round out the group, each contributing several hundred micrograms per serving. Adding any of these options several times a week can help adults meet vitamin K goals without relying on supplements.
