Choline-Rich Foods That Outshine Eggs

Health Points

  • Choline supports liver function, brain health, and cell structure at every life stage.
  • Beef liver, salmon, and soybeans deliver more choline per serving than eggs.
  • Adults over 40 can meet daily needs with modest portions of these nutrient-dense foods.

Nutrition researchers have long recognized choline as an essential nutrient, yet many adults still fall short of the recommended intake.

While eggs have been the go-to source for decades, several everyday foods contain significantly higher amounts in a single serving.

Beef liver tops the list, providing roughly 356 milligrams of choline in a three-ounce cooked portion—more than double the 147 milligrams found in two large eggs.

Atlantic salmon follows closely, with about 187 milligrams per three-ounce serving, along with heart-healthy omega-3 fats.

Vegetarians can turn to roasted soybeans, which supply 149 milligrams per half-cup serving, or shiitake mushrooms, offering 116 milligrams in one cooked cup.

Registered dietitian Karen Ansel notes, “Choline needs increase with age, especially for brain and liver health.”

She adds, “Small servings of liver, fish, or soy several times a week can close the gap without supplements.”

Portion planning remains straightforward: pair salmon with leafy greens for dinner, or add roasted soybeans to salads at lunch.

These simple swaps help adults 40 and older maintain adequate choline while enjoying familiar, satisfying meals.
