Spaghetti squash has offered a pasta swap on U.S. tables since the 1930s and continues to impress with its nutritional profile and versatility. Packed with vitamins, minerals, and fiber, it’s a fantastic choice for those aiming to enjoy lighter meals without sacrificing satisfaction.
Crafting al dente, noodle-like strands depends on a careful balance of technique and timing. Chef Emilie Symons, an online culinary instructor, shares, “Sometimes, you just get a spaghetti squash that’s very watery. You’ve roasted it, it’s tender, but you scrape it out and it’s a little waterlogged just like sometimes you can have a juicy watermelon.”
If watery, she recommends spreading the strands on a sheet pan and returning them to the oven to evaporate extra moisture. For safe cutting, “If you have a particularly tough squash, poke it in a few places with a fork and microwave it for one to two minutes. Those steam holes ensure the squash doesn’t explode in your microwave,” Symons notes.
Stability while slicing comes from trimming a small piece off each end. To remove seeds, Chef Symons finds success with a canning lid’s inner disc, which works wonders for scooping.
Don’t forget to season before baking; gentle herbs and garlic infuse flavor, as the squash itself is mild. Lay the halves cut-side down, roast at 400°F for at least 30 minutes (longer for bigger squash), and check for doneness by testing if a fork slides through easily—just don’t overbake.
Once roasted, use a fork to scrape out the squash in strands, ready for Alfredo, pad thai, or your favorite toppings. Symons also suggests transforming cooked strands into savory pancakes by mixing with egg, flour, and your chosen seasonings. “That’s delicious as a base for a little crème fraîche as well as salmon,” she says.
Imaginative twists, like these savory pancakes, show spaghetti squash can star far beyond pasta bowls. Give it a try for a nourishing and adaptable meal any day of the week!
